The Most Basic Yet Delicious Dessert
This took me less than 10 minutes to make and is the perfect dessert when you're in the mood for something sweet but also want to be mindful of healthy eating.
One of my goals in 2024 is to continue to eat only the best food, meals, whatever. So if I’m hungry around 3 pm and want a snack, it’s going to be the best snack ever, not chips or crackers or anything hanging out in the pantry. I want something homemade, delicious, you get the point. I’ve done this with almost every meal except for dessert…until now.
I want to start by saying that I’m not the best baker so this recipe is super easy because once it’s prepared, you just stick it in the freezer. It’s the dessert recipe for dummies.
In this chocolate, peanut butter date bar, the secret is making sure you buy quality ingredients, it’s just four of them and makes a difference in taste.
Dates are dates, I prefer Medjool. The peanut butter depends on which brand you buy however I like to make use of the DIY PB from Whole Foods at the station where you push the button and you see the peanuts form into the butter. Then, you need peanuts. Whatever kind you buy is fine I get roasted unsalted. And lastly, grab a thing of dark chocolate bits. So your shopping list is:
Dates
Peanut Butter
Peanuts
Dark chocolate chips
So you’ll first start by taking the pits out of the dates, one by one. Open them up with your hands then lay them flat in your Pyrex pan or whatever you use. In the meantime, heat the chocolate chips on your stove or in the microwave. Then, drizzle your peanut butter all over the dates so the entire pan is covered, then sprinkle the peanuts on top. Lastly, take the melted chocolate and pour it all over. This is your last layer. Put it in the freezer for about an hour then eat it all week long.

Ingredients:
Medjool Dates
High-quality Peanut Butter (preferably freshly made from Whole Foods)
Peanuts
Dark Chocolate
Coconut Oil (optional)
Instructions:
Remove the pits from the Medjool dates and arrange them flat on a pan or Pyrex dish.
Coat the dates with peanut butter, and make sure they are completely covered.
Sprinkle the peanuts over the peanut butter-covered dates, either whole or crushed based on your preference.
Melt the dark chocolate using either a microwave or stove, then drizzle it over the layers of dates, peanut butter, and peanuts. (Option: add a small thing of coconut oil to the dark chocolate while melting).
Set dessert in the freezer for an hour.
